Kue Sus a.k.a. Choux Pastry


  • 250ml water
  • 1 tbs salt
  • 100g butter
  • 180g flour (shifted)
  • 4 eggs


  • In a pot, boil water, butter and salt. Add flour, stir and cook for about 3 minutes to build gluten to be risen by the eggs.  Shift to another bowl, stir to reduce heat (othewise the eggs will be cooked if you add it right away). Add eggs one at a time and mix well to a sticky batter.
  • Preheat over 220C.
  • Grease cookie sheet with butter. Pipe or drop heaping tablespoonfuls of batter. Bake for 20-25 minutes in 200C-220C. Don’t open the oven door. Reduce heat to dry till no more bubbles.  Remove pastry onto wire rack immediately to cool to ovoid soggy at the bottom.

  • 1/2 cup sugar
  • 1 egg
  • 500ml (2cup) milk
  • 2 tbs corn flour
  • 1 tbs butter
  • 1 teaspoon vanilla


Whisk eggs and sugar. Add milk and corn flour, mix well. Cook on medium heat, stirring constantly using a whisker until the mixture thickens and bubble. Remove from stove, add butter and vanilla. Continue stirring until the mixture smooth. let it cool and ready to use.
